Default Temp gauge shoots to normal

Month ago car 98 s70 overheated temp gauge read normal, had to get a new hose and radiator. Now when I start the car when it's cold the temp gauge shoots straight up to normal when I know it's cold. Any idea whats up? It has 120 thousand.
