Thumbs up Learning how to cook...

I have avoiding cooking for the most part for about 45 years. Now, 2 years onto learning I'm learning some good things.

I thank God today for helping me learn how to cook. Purchased some pre-cooked smoked turkey pieces and heated them up @ 400 for an hour, then 300 for an hour (they were pretty soft then), then another hour at 250 and bamb!!! Food so good make you wanna smack yo' mama. The ribs were in the same pan and are awsome as well. I bet I can pick the pan up and drop it on the counter top from 6 inches up and the bones would be lying on the bottom of the pan. Half way through cooking the meat I put some bbq sauce on the ribs and they are real good.

So, if you cook it longer at a lower heat you'll be amazed.

Congrats on learning how to cook. I personally love cooking, don't get to do it to much anymore though.

Meh ...been married 3 times. It was either learn how to cook or go hungry. Learned how to cook. I generally cook one meal a week on the weekends. I cooked the T'Day turkey...it was pretty well decimated so I guess it was alright. I think all men should be able to cook, at least at a subsistence level just as I think all women should be able to check the fluids on their car.

I can cook but I really don't like to. But I love cooking western/cowboy soups after spending a day in a cold garage working on a Volvo. My daughters love splurging with my not-so-healthy meals, but we don't tell my wife.

What I hate sometimes is -- I buy a big steak, my wife asks me - can I use that for a recipe - she does some fancy stuff, but for some reason my steak shrinks into a thumb. How do they do that?

Basic thermodynamics, if you apply to much heat over a short amount of time, the entire body will not be brought up to temp (I.E. the outsides will be burnt and insides raw), if you apply to little heat over to long a time there's a good possibility that you'll either never cook it fully or bring it up so slowly that you'll cook all the juices out of it.

There's a happy medium that must be achieved and each cut of meat is different. For instance, I can smoke a ham (7-8 Lbs) in about 4-5 hrs; a Boston Butt of the same weight might take me 10-12 hrs.

I can honestly count the number of complete meals my wife has ever made me on one hand. I try to pick up a little bit of everything.

If you want some REALLY good eats, go to Wal-Mart, buy a raw turkey leg, soak it in the below brine recipe for 24 hrs, cook, and enjoy.

I love to cook and bake, cooking fine food doesn't have to be hard, a lot of times I just wing it and hope for the best and most times it turns out great, or sometimes not so great but you can learn form mistakes and then next time, look out.
Now baking, I like to bake Biscotti cookies and that is a science that must be followed no winging it here, even a minute to long baking time can be bad.
