I would install a new thermostat and see what happens. When you drive on the highway the coolant is moving through the system to fast to be cooled properly making it run hot.

Has the temp compisation board been bypassed yet?

When it is reading hot try tapping on the top of the dash and see if it goes down.

Glad it is better now. There is a way you can bypass it. You would remove it and install a jumper wire on terminal 1 and 3 and put it all back together.
