2004 S40 intermittent overheating problem

Okay I'm going to say it's thermostat because it overheated one time about 2 months ago and then it didn't overheat again for a month and then it progressively got worse and worse until finally it entered limp mode and I limped it into my mechanic and before we rip it apart when I'm trying to diagnose it a little bit further but being that it wasn't intermittent cooling problem I'm thinking thermostat because it literally blew a hole through the reservoir

I'd say it WAS the thermostat. But by ignoring that, you've probably cost yourself a lot of money. I'm betting that the fact your reservoir blew up indicates that the head gasket has given up the ghost from overheating, and compression gasses are passing through to your coolant system. If that's the case, you've got to figure out if it's even worth fixing the car or not. If you're a DIYer (doesn't sound likely) it could be worth putting lots of sweat equity into the vehicle, pulling the head and having it checked / fixed at your local machine shop (or replaced), along with the timing belt and water pump, etc.
