Aftermarket parts
I have a 2005 S60 that I'm getting estimates on to replace timing belt kit w/ water pump, cam shaft seals, and breather hose. Why is it that all of the mechanics that have given me an estimate tell me that putting in genuine Volvo parts is the way to go? I saw a sticky on this forum with several names of aftermarket providers. What is the consequence of using aftermarket vs Volvo parts?

FCPEuro and IPD sell timing belt kits which give you a choice of Volvo OEM, Aisin (lol not Asian) or other aftermarket brands. Volvo OEM are known to be very stout to the point some recommend doing the pump every other belt change on the models with the 70K change intervals so I'd go that route and not worry about it for the next 100K miles . The "full" kit should also include the tensioner/dampener and idler, the timing belt and seals for the cam shafts and crank. Note doing the cam seals on the 2000+ models is a pain since you the VVT gear to deal with (requiring cam locks and a reset procedure) so I'd look for a mechanic with Volvo experience. Also its a good time to refresh the serpentine belt and the idlers there as well. I would also pull the timing cover to see if you do have a cam seal leak as well before you have the work done. If you do, its likely that you have a clogged PCV and will need to consider a refresh there as well.
