I could be wrong, but I don't believe the navigation system screen in the 2011 is touch sensitive. There's no option to disable the navigation system, however you may be able to accomplish this by removing the associated fuse.

I have a 2011 XC90. In Australia at least, there are two types of Satnav that came with an XC90, neither are touch screen.
My one has controls on the back right hand side of the steering wheel, where your fingertips would be if you hold the wheel in a 9-3 position. This type should also come with a remote, though mine didn't when I bought the car 2nd hand
The other type just has a remote, no steering wheel controls, but I think that would be on pre 2007 models so on a 2011 you should have control behind the steering wheel.
How are you operating it now?
