Welcome to the forum.

If the car dies immediately when you remove the cables the jumped car is totally running off the car jumping it.
With a new battery the car should start and run on it's own even if you removed the alternator. (For and hour or two that is)
Once running the alternator should keep the car running even if the battery is bad.
With a new battery and alternator it isn't making much sense it dies when you remove the cables as that indicates the jumped car is getting all it's power from the car jumping it and the battery and alternator are both "dead" in the cars circuit.
Where is it you are hooking up the jumper cables to the car being jumped ??
