This issue bothers me a lot since it doesn't happen every time. When its hot out (75+ degrees or about 1 in every 5 times) when I start my car it sounds like the starter(?) is spinning ( loud grinding sound) and also the engine Idle is very low and sometimes wont even stay on (without having the foot on the gas for a minute)

Can someone diagnose this? First time volvo owner here, and would like to sound somewhat knowledgeable bringing my Volvo to the shop.

Sounds like two unrelated issues. A bad, dying starter and an idle air control valve issue. It could be as simple as the throttle position switch being maladjusted. You really need to at least get a Hayne's manual and learn to do some of the minor stuff yourself. Taking a 20 year old car to the shop for every little thing will get expensive fast. But then...that's how I buy them for so cheap!!
