2 or 3 more tranny fluid dump and fills? Or engine oil? He made me shift through each gear 10 seconds each and then 50 seconds on the low gear. Made me do that 3 different times

If your mech drained the tranny oil once only by removing the tranny drain plug (dump and fill), refilled and got you to shift gears etc you removed 3.4L of old tranny fluid, replaced it with 3.4L of new fluid and mixed it with about 3L of tranny fluid that does not drain out when you simply let the oil drain through the drain hole. Put differently your fluid is now roughly 50% new fluid and 50% old fluid. That is better but not good enough. One more will give you roughly 75% new and 25% old and a third change will get you in the mid 80% range of new fluid and then it will be looking waaaay more red (like it is supposed to.

Previous owner was probably doing topside oil changes.

This is the only way Mercedes Benz dealers change oil in their customers' cars so there's nothing crazy about it.

If this were my car I'd just buy an oil extractor (I already have one) and go with the flow, so to speak.
