Car is not starting was running a month ago, installed a new MAF sensor from Autozone...and now the fans are coming on which of course is indicative of a bad MAF. Prior mechanic replaced the spark plugs and knock sensor supposedly but just trying to figure out where to begin.

The MAF may be bad right out of the box. It's happened before. I'd take the new MAF back and get a warranty replacement. Then I'd clear the trouble codes and try again.
I'd also buy a can of spray MAF cleaner and clean the original MAF. Then plug it in to see if the car acts the same as before.

Abnormally long cranking times usually mean a bad FPR. When mine went bad I first replaced the IAC because the car would start fast with my foot on the gas a tiny bit. But the problem continued and I discovered this forum which pointed me to the FPR which fixed it. I just left the new IAC in place since it costs so much.
