Default Stalling and pickup issues

I went the the nearest AutoZone and they had said that it was the Head Gasket going out as to why my car would start shaking when I would press more in the gas. It has gotten to the point that I would sometimes have to press the pedal all the way down to get some for of speed. When I out it in reverse, it stalls out, as well as the RPM's fluctuate when at idle. I let the engine warm up a bit before I drive it and it slightly works. What could be some possible issues? It's a Volvo s40 1.9L Turbocharged. I love this car so much, and I just don't want to let it just die the way it has. I put a new Fuel Filter, new cabin Air filter, new Oil filter in, new spark plugs and new air filter. I'm starting cheap. Also, it went from 30 MPG to 20 MPG very fast. It sucks gas worse than a heavy duty diesel now.

My first thought was dirty/sticking injectors which would explain rough ride and lower MPG.Check the fuel pressure in the rail if it stays for some hours.Then I thought you could have popped the rubber hose off on the intake charged section which connects the bottom of the IC to the hard pipe coming down from the turbo.This was a fairly common problem worth to go under and check.Same goes for the top one as well.

Welcome to the forum. A head gasket is either good or bad. There is no "going out".
Do you have any trouble codes? Check engine light?

Have you ever replaced the ignition coils and wires? A tuneup on the 1.9L engine when running rough normally involves coils, wires, and plugs. The car has 2 coils and 2 plug wires because 1 coil fires 2 cylinders. The normal problem is a cracked ignition coil which allows the spark to jump directly to the head and not the plug. Look for hairline cracks on the plastic bit that fits down over the spark plug.

As suggested above, check the rubber intake tubes for any that are loose or broken. You don't want that turbo boost going to atmosphere.

Do you have any strange noises from the engine? Any whistling sounds? Is it leaking oil?
