Default acceleration...

I dont know if it has anything to do with the weather..90-95 degrees here, but the cars acceleration, especially with the A/C on, feels thick, and some what loose, kind of slipping and has a deeper growl to it....

Should a Check Engine Light come on or some other light, if there was something wrong, or is this something else?

It is probably due to the weather.

You have a T6 right? The intercooler is getting a lot more hot air then cold air or cooler air so it wil bog down.

Having the A/C on will slow down the car a good amount, that's normal though. The heat probably doesn't help.

Yeah the fan will stay on sometimes when it's hot. Also, it's good to keep the car running before you turn it off after you've driven it hard or long so that the turbos can cool down.

It may be your shift lock engaging. You will hear or feel an audible "click" when you get up to speed from a stop. I wouldn't worry about it as long as your car is shifting and operating normally otherwise.

i thought that I was hearing that audible click, but I come to find out that it sounds like plastic cracking and its not just one time its multiple times in a succession, almost like the sound when you pull your e-brake up...

I have the same thing (sound) on my car sometimes. Not all the times. Sounds like something clicking on acceleration and then as soon as I slow down it goes away.
