I am having good deal on 205/55/R16 Michelin Tyres, whereas the minimum requirement on my S80 is 215/55/R16.

Does it effect in any way to the parts like Steering rack, power steering, rods etc.

The 205 tire is slightly narrower than the 215. The 55 number refers to 55% of the width so having a narrower tire would result in less sidewall. By my calculations the 205 has a 112.75mm sidewall and the 215 has a 118.25mm sidewall so a 6mm difference. I would think you would have no issues with fit. Look at the speed rating as that may be a differentiator and the reason for the price difference.
