I have issues with the tailgate staying up, especially as the weather turns colder. You open the tailgate and it will slowly come down , not crashing. Also, the tailgate won't always latch. Any adjustments I need to make?

You need new hatch shocks.
Try lubing the latch first and see if that helps the closing problem.
