Modern cars' electric fans are designed to turn on only when the engine coolant reaches certain temp. Did you replace the parts with OEM?
Try this: Turn the air conditioner on. If the fan runs as long as the A/C compressor is running, I would assume coolant temp signal is not reaching the ECU correctly either by dirty, loose or poor wiring connections, or one or more parts you've replaced was shot or defective from the mfg.
When you say "thermistate", did you mean thermostat? And by saying "cooling switch", did you mean the coolant temp sensor? If you could clarify these, we may be able to help you better.
