Default Issues after fuel pump recall

Hi, guys. New to this site because I've never had a real issue with our '02. We just had the fuel pump replaced, however, on our XC with 62k. Everything seemed fine until it stalled going downhill at 70mph. Got it restarted on the level and got back home (8 miles) Pulled DOWN the drive and parked it. It wouldn't start 2 days later. After sleeping on it I thought it had to be the gas level even thought the car had a 1/4 tank plus and the readout said 125 to empty. Put 3 gallons in from a can and it ran like a watch. So, I'm wondering if anyone else has had the same problem. I'm waiting to get the car back into the dealer. I first thought the level sensor was probably incorrectly installed or the like but I just filled the car up from 1/2 tank and it took about 10 gallons as it always has so that put a damper on that theory. I'm wondering if the pickup on the new pumps is designed differently but I can't believe they'd leave 5 gallons in the tank for whatever reason. Thanks for listening.
