they are bucket seats. the head rests fold down but i am not sure how to take them out and i high advise agianst it being as that they have cables and springs that allows them to lift up and fold down if you need to clean them or make a repair try to do it with them attached.
Just wanted to share (10 years later) how I removed the headrest on 3rd row of my Volvo XC90 2021.
1. Remove the plastic cover. It takes some effort and using a flathead screwdriver to pry it open, but it's doable.

2. There's a thin metal clamp that can be easily removed using a screwdriver. There are 2 of them per headrest, remove both of them.
3. Pull out the headrest, it should be very easy to take it out now. I don't think the metal base can be removed, but at least it's easier now to install car seats on the 3rd row and my back view is less obstructed.
