Transmission & tow package Swap...

Is it possible to swap a transmission and towing package from a 2004 XC90 T6 AWD and move them to a 2007 with S6 engine?

No - totally different animal - the FoMoCo inline 6 (2007?+) is a much better choice but would be cheaper to just buy the correct car to begin with.
