There seems to be only one repair manual for the S60 other than the factory DVD version and it only covers the 2001 model:

If you need a DVD-based factory service manual, eBay seems to be one of the good sources. Or, in general the first thing you need to do to replace a fuel filter is to relieve system pressure, then disconnect the inlet & outlet fuel hoses from the filter then you undo the filter from its bracket. However, note that the S60 may have different set-up. I believe the S60 drivers in the S60 forum could tell you better than I could.
Good luck & be safe should you decide to do the job yourself.
