The OEM parts you are eager to replace are better than new parts likely made in Asia and inferior to the original parts on the car now! If it ain't broke don't mess with it. By all means fix what's broken but leave things alone just because they are not shiny new. Faded, cracked Interior OEM parts are mostly NLA new, and reproductions may be OK, more or less... Volvos Red Blocks are known for reliability and longevity and loved just for those qualities. If you are itching to replace things, buy a recent model Volvo, you will have your hands full.

Besides a high flow cat. Any performance Bolt on parts for this car to get more HP?
Voluparts.com has some reproduction interior parts.

Hi flow cat - on many 240s the converters break apart on their own and spit out the tailpipe. Not a problem unless still subject to emission inspections.

Bolt on performance parts? Not really - sure you might could go from 124 HP to 132 HP with XXX dollars -

if you have skills and want to make a huge performance upgrade, check out jagsthatrun.com - One of my retirement projects will be to drop a small block Chevy into a redblock Volvo - unless I decide to go electric. :-)

Great project idea but then it wouldn't really be a Volvo if Chevy powered, even less as a generic battery operated vehicle.

Does this car drive under its own power?
What's with the padlock on the back?
What do you plan to do with it once finished?
Is the A/C working? You may want to change it to R134 if it hasn't been done already. That would be a worthy upgrade.

Copper NGK plugs work best for that motor, and Bougicord wires. I'd save some parts like the alternator you are replacing which are probably perfectly good OEM.

Experience. I can't quote the science besides having saved, kept, and brought back to life hundreds of Red Blocks since 1986 and having learned a thing or two. The Volvo 240 is a simple beast designed in the '60s and as such doesn't benefit from many recent "improvements". In fact, plugs other than copper often cause unwanted side effects, ditto for wires other than the OEM Bougicords.

My, but you are well prepared! Brings back the memory of driving to Costa Rica in the '90's. I too had a gallon of water...
