Or should I just buy a cheap pep boys tach and not take the instrument panel apart? I just like to know what I'm turning, and really have no use for the clock...

I don't think that instrument panel is all to difficult to remove, just remember where everything is connected. I think it would be easier than installing an aftermarket one because the connector is already behind the cluster. It seems a little high for me though. I have seen a kit with both a tach and a small clock go for about that much...
The instrument cluster on a 240 is easy to take out; I routinely pull them out at the wreck yard in less than 3 minutes. (if I see one with a trip meter showing anything other than all zeros there's a fair chance that the odometer gear has been replaced, have gotten several good ones this way) As Burn Stains pointed out, you're pre-wired for a tach; it's the red/white wire that isn't doing anything right now. Just did a transplant on my '89 and it was pretty much plug and play.
You guys rock, thanks. More eBay browsing revealed a tach-clock combo like Burn mentioned for less, just used that one as an example. Going to my local pick-a-part Tuesday, wish me luck!
Very good day at the pick a part, got a complete instrument cluster for $30 that had a tach. Took mine out my old one, put tach in, and 25 minutes later I discovered that at 80mph, I'm turning 3K. Oh, and something that had been previously disconnected got reattached, and now I know how far I've gone!
