Just got my hands on a 1980 262 Bertone Coupe.

Here's the deal.
I just purchased the car a week ago, the car has been garaged for over fourteen years because the engine got on fire by what appears to be an electrical issue.
Afterwards it was storaged at a garage in which several engine parts were stolen (including the front headlights and grill).
Soooo im left with a 44k miles car with an incomplete engine, electric and brakes to be rebuilt but mint interior and body.

I also own a 1989 760, so i was thinking about an engine / tranny swap... Would that work?

Sure it would work. Or...steal a turbo motor and drivetrain and put it in there!
