Sadly you really cannot do it unless you get really creative using a torch as well to rebend the spring after you cut it.
I have heard of people removing one coil but then they had a really hard time getting the spring to sit right almost like it was going to pop out.
I wanted to do the same to mine. But threw that idea away really fast. I will save up the like $270.00 for the eibach lowering springs and buy them.

I had a friend whom did this.... Cut the Springs and put them back on the car. It looked good lowered until we went over a huge bump on the road and the spring popped off. The damage to the car superceded the price of the springs by 11x..... I wouldn't recomend it. Seen it too many times. I used to hang out in the "Mini truck" scene and it seems to be the norm there.

Yeah I guess it depends on the car.
Generally they ride like crap.
We did this on my friend's 94 Tercel in high school one night in my garage because we thought it would be hilarious.
Rode like normal and lowered the car...but that was it, no handling improvements (obviously).
Still a Terstang though...
