T stat upgrade
From what I heard there are many sensors that go to different temps. FCP groton sells two types.....one that is 87 and one that is 92. My car is a 95 850 GLT wagon Non-Turbo, which one would be better for my car? My engine temp acts all weird, some days its stuck on almost 0 and others its above 65 percent....dont know the exact temp just the position of the needle on the gauge. Just looking to replace it, I heard its cheap and quick......key point im doing it is well its cheap haha.
Honestly, it really doesn't matter. Thermostat temperature ratings are the temperature that the thermostat begins to open at - at the end of the day they are all fully open by the time you get between 210 and 218 degrees F.
Your root problem sounds more like the ECT sensor but change them both (the thermostat and the ECT sensor) at the same time. Also, buy the upgraded coated steel bolts for the thermostat housing before you even start since there is a very high probability that you will strip out the head on the old aluminum bolts trying to get them out. The bolts cost around $1.25 each at the dealer and you will need 2 of them.
On occasion you can get the old bolts out by letting them soak in PB Blaster overnight before you try to remove them.

I would figure out what temp your actually running. You can do it with a code reader, check the live data. I am having a little bit of an issue with mine from time to time. I think it's my ignition.
It does list that on the FCP site but I'm sure they forgot about a hundred degrees.
187 degrees and 192 degrees would be the temperature when the thermostat starts to open.
The 192 is the one for the non-turbo models.

I got in the car turned it on and it was down to like 10 percent again haha, IDK im just going to change it out...everything else is new.
