consuming a quart every 3000 miles is not considered problematic albeit its kind of annoying. There are some service bulletins for 2012 to 2016 S60s so you may want to check in with the dealer to see which apply to your car. Do you see any signs of weeping or leaking? There is a general history of this generation of cars having oil consumption issues - not sure if its due to rings/valve guides/seals etc but worth googling for background.
The car doesn't have a PCV valve per se like your mom's old Buick, it has a breather system with hoses from the block that feed an oil separator that returns the oil back into the crank and sends the blowby gasses back into the intake. Should the PCV breather system clog, you will build up positive crank case pressure which after time can push out seals (generally starting with cam seals) causing leaks. A simple test is to put a latex "surgeons" glove over the oil filler neck and if it inflates with the engine running you have positive crank pressure. (check out youtube for vids on this test).
