What is the maximum size wheel you can use on a S80 without rubbing?

Hard to say because even some of the 17's rub at times once the steering stops get worn...

I really cant chime in on this but the way I see my S80, its not practical to go over 17, best case 18...
maybe someone else has a say

I'm no expert on this matter, but, I was looking into getting a new set of wheels for mine, and I was looking at http://www.tirerack.com. They say that the largest wheels that they have for the S80 is a 19" but this is for the 1999 S80 2.9. I know that this doesn't really answer your question, but maybe there could be some comments or information on tirerack that might answer your question. Hope this helps.

Rim size in itself isn't going to be your limiting factor. Its will be the total wheel radius plus the width.

If you have 19" with a very small side wall, then your total radius will be the same as 17" with a big sidewall.

Most tyre places should have a chart, you look up your current wheels please sidewall, and it'll sell your the radius of you wheel, you then just look at the different combinations fo rim/sidewall.

also remember that your speedo and all the computer is calculated on rotation's of your wheels, so if you increase/decrease (which is obviously affecting how far you travel in a single rotation) then it will affect other things so you want to stay about the same.
