This could be done seeing the S80 has a manumatic (geartronic) transmission. I was thinking about fabbing up something to do this. Anyone seen this done yet?

 

May I ask why you would want to, the level of work involved and the impracticality of it really does not make it faesible.. Most paddle shift applications are wired to an automatic clutch or to a genuine computer controlled manual system, not a full auto.
