Are you talking about a rear facing or front facing seat? If it's a larger, full sized, front facing harness type seat (like the Boulevard) it will be a tight fit. Those seats consume a lot or space, and would be tight in any car. The real benefit in the XC is the integrated booster. Nothing is better for creating space for two additional adults with the child. As a bonus, it's fairly easy for kids to buckle themselves in with the integrated booster.
Short of a suburban/expedition, nothing will have much room for two adults with a Boulevard. But you won't be in that seat for long, and might be able to find a smaller front facing harness style seat. I think car seats are the major reason for the large numbers of big SUVs and minivans on the road.

What year XC70 are you talking about? I've got a 1998 V70XC with a Britax Boulevard CS in the back. I've got my daughter rear-facing at almost 2 years and there's plenty of room back there. We have another kid on the way and I put my other Boulevard form my 850 in the back and there was still enough room with two of them rear-facing to fit an adult in the middle. I think that the 2001 and up XC70s have deeper side seats in the back though so you may need to but the seats closer to the middle. Here's a picture of it in my XC, sorry for the horrible quality but I just used my phone to grab a quick pic. Let me know if I can be of any more help.
