I have a 2005 S40 T5, and I have come across a 2006 S40 T5 that has a new turbo and head for a great price. The car was rear ended. Are these parts interchangeable ?

The easiest way to confirm is to check the modular engine codes wiki then check the engines or build plate/VIN. Most likely both S40 T5s have the B5254T3, which has the integral turbo/manifold design - if so, its a yes.
