dies randomly but starts right up 1985 750 gle
When I'm driving the car just dies randomly. Sometimes when idling, and sometimes when coming to a stop to suddenly. And recently on the freeway I'll put my foot on the had and feel zero acceleration. But for the most part it droves fine. And it doesn't have a hard time starting up. Also my temp gauge doesn't work, and my speedometer sometimes works haha

Can we assume you meant a 740, or is this a 760 ? the only 750 I know of is a BMW.
1985 is right in the middle of the 'biodegradable wiring' years (82-87), which means electrical problems are all too common on older cars
when its fully warmed up and running normally, does it idle steady at about 700rpm ?
the temp gauge is connected to a coolant temperature sensor on the left side of the engine block, under the intake manifold. most often, 'not working' is due to a broken wire. the speedometer is connected to a sensor in the differential on the rear axle, and intermittent speedo problems can either be flakey wiring, OR an electrical problem on the speedometer itself, often crusty capacitors.
random deaths like you describe could be a number of things. fuel pump relay, fuel pumps themselves, radio suppression relay all could cause stalls. or the wiring to the hall sensor in the distributor, which provides the master timing for both spark and gas.

First look at the Hall Effect sensor and associated wiring. Yes, '85 740 are prone to having bad wiring which does affect all kinds of things so examine the harness, particularly under the intake as there is where the problems usually show up. Open a little of the insulation, see if the wires are exposed.
