Just relaced the front brake pads on 2008 S60 2.5T.

Problem is, the brake pedal is extremely soft..all the way to the floor soft.

Have read that it could be that I need to replace both the front and rear pads. Is there any truth to this?

no, your spring clips are installed wrong, search and you shall find needed pics....
